Lauren here bringing you a yummy soup recipe that is guaranteed to warm the soul. The cold always inspires me to whip up new soup recipes.
Curried carrot and apple soup with coconut milk
2 teaspoons canola oil
2 tablespoons of curry powder (yellow)
10 or so carrots chopped skins on
1 large onion chopped
2 apples peeled cored and chopped (any kind)
3 cups vegetable broth (homemade or store bought)
1 can of full fat coconut milk
salt and ground black pepper
-Heat the oil in a large soup pot and very gently fry curry powder for 2-3 minutes
-Add the chopped carrots and onion and apple stir well until coated with the curry powder cover and cook on low for 15 minutes stir a couple times to prevent sticking
-Spoon the vegetable mixture into the food processor or blender in batches adding the vegetable broth until smooth.
-Return soup to the pot and add the can of coconut milk bring to a boil then adjust seasoning, by that I mean add more curry if needed, or if you like a little spicy add cyanne pepper.
